Fajita Grilled Cheese Sandwich
A fajita grilled cheese sandwich made with shaved ribeye steak features tender, flavorful ribeye combined with melted cheese and grilled fajita vegetables, all toasted to a crispy, buttery perfection!
Ingredients
3 small bell peppers (mixed colors: red, green, yellow or orange) thinly sliced
1 small onion; thinly sliced
3 tbsp oil for sautéing
12 oz ribeye shaved steak
1 oz fajita seasoning mix in ¼ cup water
¼ cup mayo
4 pieces of sourdough bread
4 slices of Tillamook Medium Cheddar Cheese
4 slices of Tillamook Pepper Jack Cheese
Set pan over medium-high heat, add the oil and once hot saute the veggies, after about 5 minutes, remove from the pan, add the shaved ribeye steak and cook until brown.
Return veggies back to pan, season with your favorite fajita blend, and mix until everything’s coated, cook for 1-2 minutes.
Set griddle to medium-low heat.
Spread 1 tbsp of mayo on one side of the bread and butter the pan. Do this to both pieces of bread.
Lay the bread mayo-side down, then layer Tillamook Pepper Jack on one side, Medium Cheddar on the other, repeat on the other piece of bread with opposite cheese on each side, sprinkle on Tillamook Mexican 4 Cheese Blend.
Allow the cheese to get gooey, pile on the fajitas, top with more Mexican 4 Cheese Blend, and close it up.
Add a splash of water to the pan, cover it, and let it steam for a minute or two — then flip and repeat until the bread is nice and toasted.
Serve and enjoy!
Tip: Temper the cheese by letting it sit at room temperature for about 20-30 minutes before cooking; this helps the cheese melt faster, smoothly and evenly.
