Garlic Herb Bacon & Tomato Tillamook Grilled Cheese

Crispy sourdough layered with gooey Tillamook cheddar, smoky bacon, and fresh tomato, slathered in garlic herb butter and grilled to golden perfection. Comfort food with a savory, melty twist.

Ingredients

  • 4 slices of hearty sourdough (or brioche for a softer bite)

  • 4–6 slices of your choice of Tillamook Sharp Cheddar, Provolone, Swiss, and Colby Cheese Slices

  • 4 strips thick-cut bacon, cooked crisp

  • 1 large ripe tomato, sliced and blotted dry

  • 2 tbsp mayonnaise (for spreading on the outside)

Garlic Herb Butter:

  • Mix the Butter - Stir together softened butter, garlic, herbs, and salt until smooth and spreadable.

  • Prep the Bread - Spread mayo on the outside of each slice (this gives a crisp golden crust). And then spread the garlic herb butter on the inside.

  • Layer It Up - Inside, stack: a layer of Tillamook → bacon → tomato → more Tillamook. Cap with the other slice of bread, mayo side out.

  • Grill It - Heat a skillet or cast iron over medium-low. Then grill sandwiches 3–4 minutes per side, pressing gently, until golden and the Tillamook Cheese is gooey and melted through.

  • Serve - Let sit for a minute before cutting (so the cheese doesn’t all run out).

    • Optional: finish with a drizzle of hot honey for a sweet-spicy kick.
