Prime Rib Mac & Cheese

Chef Cuso made a smoked Prime Rib with white cheddar Mac n Cheese inspired by the movie How The Grinch Stole Christmas.

  • Preheat the smoker to 225 degrees F.

  • Prep the prime rib - use hot sauce as a binder for the steak seasoning. Generously season all sides of the prime rib.

  • Smoke the prime rib for about 2 hours, until the desired internal temperature is reached. Chef Cuso recommends 135 degrees F, which is medium rare. Let rest for about 20 minutes while you make the mac n cheese.

    • Tip: Don’t have a smoker? You can cook the prime rib in the oven the same way!

  • Boil the pasta according to the instructions on the box. While the pasta is boiling, shred all the cheese.

    • Tip: Cook the pasta al dente if you aren’t serving right away – the pasta will absorb the cheese sauce the longer it sits. (No soggy noodles here!)

  • In a large oven safe pan, make a roux with the butter and flour. Cook for about 3-4 minutes.

  • Slowly add in the milk and then cream cheese. Mix until well combined and smooth.

  • Add shredded cheese slowly while mixing continuously.

  • Once the cheese sauce is your desired thickness, season with salt and pepper.

    • Tip: Add more milk if your cheese sauce is too thick for your liking!

  • Fold the pasta into the cheese sauce and top with more cheese. Broil until golden brown and set aside.

  • Slice the prime rib and admire the perfect wall to wall medium rare cook. Cut into bite sized pieces.

  • Top your mac n cheese with prime rib and chives.

  • Enjoy with friends and family! No one will be a grinch after eating this!
