  • In a bowl, combine ground beef and seasoning.

  • Dice jalapeños and set aside.

  • Cook bacon in a cast iron pan, slice into bits when fully cooked and set aside.

  • In a small bowl, combine Galapagos, bacon bits, and cream cheese - mix thoroughly.

  • In your palm, create a cup out of the beef mixture and place a heaping tablespoon of the cream cheese filling into the center well.

    • Tip: Shape the filling into a hockey puck to achieve more of a burger shaped patty.

  • Add more of the beef mixture on top of the filling and seal closed to create a stuffed burger patty

  • Grill until cooked to your desired temperature

    • Tip: This stuffed burger is fragile - only flip once or twice on the grill so it doesn’t fall apart!

  • Add pepper jack and cheddar cheese on top to melt

  • Grill the buns

  • Spread the pepper jelly on the buns

  • Assemble the burger on the bun and enjoy

    • Tip: Keep a lot of napkins nearby!
