Tuna Melt Flatwich
The best sandwich is a flat-wich, meaning that while it’s grilled it’s been flattened so that the filling-to-bread-to-cheese ratio is even. A healthy, filling tuna melt feels like the perfect flat-wich, with a hint of Tillamook sharp cheddar to balance everything out…and get supremely melty.
Ingredients
1 (5 ounce) can of albacore tuna, packed in oil
¼ red onion
2-3 medium scallions
¼ cup Castelvetrano olives
¼ cup Greek yogurt
1 tbsp grain mustard
Juice from ½ of a lemon
1 large garlic clove, grated
¼ tsp red pepper flakes
½ tsp kosher salt, plus more to taste
1 demi baguette, halved
4 slices Tillamook Sharp Cheddar Cheese
Drain the tuna and add it to a large bowl.
Dice the red onion, thinly slice the scallion greens (reserve the white ends for another use), roughly chop the castelvetrano olives and add this all to the tuna.
Add in ¼ cup of Greek yogurt, 1 tablespoon of grain mustard, the juice from ½ of a lemon, 1 grated garlic clove, ¼ teaspoon red pepper flakes, and mix. Taste and season with salt as you’d like.
Place a large cast iron pan over medium heat. Slice a demi baguette in half, then slice those halves open to create two sandwiches. Add the tuna salad to each sandwich, then layer on two slices of cheddar per sandwich.
Place these on the cast iron pan and use either a grill press or another heavy pan to press the sandwich down into a flattened piece. Cook for 2 minutes, then flip and cook an additional 2 minutes until melty.
Tip: No grill press? No problem. Just use a slightly smaller pan than your cast iron. Make sure the bottom is nice and clean and use that as the tool to press your sandwich into the perfect flat-wich.
Serve warm.
