Recreate this classic favorite with a twist using extra melty Tillamook Farmstyle Slices and Sour Cream for rich, creamy flavor in every bite.
Ingredients
Tempeh Marinade:
1⁄2tsp smoked paprika
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp anise seeds
1 tsp red pepper flakes
5 cardamom pods
2 tsp ground mustard
1 tsp Worcestershire sauce
1 tbsp apple cider vinegar
2 tsp soy sauce
2 tbsp olive oil
1⁄4cup broth or water
Sandwich Sauce:
1⁄2cup Tillamook Sour Cream
1⁄4cup mayonnaise
1⁄4cup ketchup
1 tbsp relish
2 tbsp onions, finely chopped
1 tbsp Worcestershire sauce
2 tsp mustard
1⁄2tsp paprika
For Building the Sandwich:
8 oz tempeh, cut in half and thinly sliced into wide strips
Sauerkraut
2 slices Rye Bread
1 tbsp Tillamook Unsalted Butter
Toast and grind the coriander seeds, cumin seeds, anise seeds, allspice, and cardamom. Add the mustard powder, paprika, red pepper flakes, and salt and mix.
In a small container combine the spice mix, apple cider vinegar, Worcestershire sauce, soy sauce, olive oil, and broth and mix. Add in the thinly sliced tempeh and let marinate for at least 30 minutes or up to 4 hours.
Transfer tempeh to a large heavy bottomed pan with a generous amount of neutral oil.
Cook on medium heat until both sides of strips are lightly browned. Set aside.
To make the sauce, combine the sour cream, mayonnaise, ketchup, relish, onions, mustard, Worcestershire sauce and paprika in a small bowl. Set aside.
To build the sandwich, cover both slices of bread with Tillamook Unsalted Butter and place both in a pan butter-side down. On one slice add a generous amount of sauce, 4-5 slices of tempeh, and sauerkraut. On the other add 2-3 Tillamook Swiss Cheese Slices.
Add the slice with the cheese on top of the tempeh slice and press down. Cook on both sides until bread is nicely toasted and cheese is melted, about 5 minutes. Serve immediately and enjoy!
TIP: To take your sandwich to the next level, use a nonstick pan and place a Tillamook Swiss Cheese Slice directly on the pan. Add your sandwich on top of the cheese and cook for 3-4 minutes or until the cheese is caramelized and crispy.
